Starred chef K Goto and Darégal has paired traditional Soy Sauce, a key ingredient in catering, with culinary herbs typical of Asian cuisine to create tasty and varied combinations. As a coulis, this condiment offers taste diversity and elegant plate decoration. Presented in a supple bottle with a precision tip, these coulis are easy to use. A genuine tool for personalising plates, the Soy Sauce Coulis range offers really diverse exotic tastes and warm coppery colours: Shiso Soy Sauce Coulis : This brown/green, slightly acidic coulis reveals the flavour of cumin and herbaceous notes. Ginger Soy Sauce Coulis: This golden-coloured coulis perfectly reproduces the notes of rose, citrus and pepper that are so characteristic of ginger. Yuzu Soy Sauce Coulis : This caramel-coloured, slightly acidic coulis evokes notes of citrus fruits and white flowers. Kaffir Lime Soy Sauce Coulis: This dark brown-coloured coulis displays intense notes of rose and citrus. Chilli, Garlic and Ginger Soy Sauce Coulis: This light brown-coloured coulis has a nice balance of hot and spicy notes. In practice, one 240g bottle allows 120 plate decorations. Sold frozen, they can be used within 3 years when frozen. Once defrosted, they can be stored in the refrigerator for up to 2 weeks.

True Explosion of Nature! Les Infusées are the result of a close collaboration between starred Chef Christian Le Squer and Darégal. Unlike the flavoured oils making up the majority of the market, our natural and gentle infusion process reproduces the fresh plant’s complete aromatic profile. Christian Le Squer chose grapeseed oil (the most neutral in taste) and worked the balance of the notes. Basil: the initial classic taste of bergamot and cloves gives way to fresh and floral flavours. Lemongrass: the initial acidic citrus taste is refreshed by subtle notes of eucalyptus. Spanish garlic: the distinctive notes of garlic are well-rounded and cooked with a toasted finish. Mint & Rosemary: a heady herbaceous note gives way to the fresh taste of camphor. Lemon Thyme: a blend of delicate citrus notes and white flowers. Les Infusées can be used like a conventional oil, as well as a dressing for salads, meat, fish and vegetables. As an exceptional finishing touch, just like a perfume, Les Infusées release their Top Notes, for a true sensation of freshness. Chefs love them because they add the Top Note impact to their recipes, without disguising the flavours from the other ingredients.
